Short-Term Storage (Up to 2 Days):
1.Keep Them Cool, Not Frozen:
Store oysters in the refrigerator at 35–40°F (1.5–4.5°C).
Do not freeze them or let them sit in standing water.

2.Proper Container:
Place oysters in a mesh bag, open container, or bowl.
Cover them with a damp towel (not soaked) to maintain humidity without suffocating them.
Keep the cupped side down to retain natural juices.

3.Ventilation is Crucial:
Oysters are alive and need to breathe.
Never store in airtight containers or plastic bags—they’ll suffocate and die.

Longer Storage (Up to 7 Days):
Still use a refrigerator and the same method above.
Check for signs of life: Tap the shell—if it closes, it's alive. If not, discard it.
Some people store them on ice in a cooler with a drain (so they don’t sit in water), replenishing the ice as needed.

Avoid:
Submerging in fresh water (kills oysters).
Using sealed plastic bags or containers.
Leaving them out at room temperature.

Signs of Fresh Oysters:
Closed shells (or they close when tapped).
No foul smell (they should smell like the ocean).
Heavy for their size (indicates they still have liquor inside).
